  • Food product development and analysis to improve health
  • Mediterranean diet and other dietary component consumption in various populations
  • Antioxidant metabolism/function in humans (specifically, role small molecule dietary antioxidants may play in the prevention of cancer and atherosclerosis)
  • Inquiry-based learning techniques in food science
  • Childhood weight management
